Valentines Day Treat – Strawberry Shortcake

Warning – Moorish!!
Cooking time 12 minutes. Makes 12

Ingredients

175 g self raising flour
50 g sugar
1 1/2 tsp baking powder
1/4 tsp salt
100 g butter
5 cups fresh strawberries, sliced
150ml/5fl oz double cream
1 tbsp icing sugar
1tsp vanilla extract

Cooking Instructions

• Preheat oven to Gas Mark 7/230 degrees.
• Cream the butter and sugar until almost white, then mix in the flour and baking powder. Mix till dough like.
• Turn out dough on to a nonstick mat or floured surface. Knead gently two or three times then flatten or roll to a 1/4-inch thickness. Using a round cutter cut 12 circles from dough, re-rolling scraps where necessary. Sprinkle a little sugar or ground rice on top if you like.
• Bake on a nonstick baking sheet for 12 minutes or until golden. Cool on a wire rack.

Cream filling:
• For the vanilla cream filling, pour the double cream into a large bowl and add the icing sugar and vanilla. Whip until the mixture forms soft peaks when the whisk is lifted from the bowl. For a low fat option, use a low fat whipped dessert.
• When the shortcake is cool, divide whipped topping and strawberries among the shortcake bases and place a round of shortcake on top of each.
